 I got this recipe from Taste Of Home magazine. It is so good, yet so easy! Kids love it! I crush the french-fried onions in a baggie to avoid the mess.
Ingredients

Servings 4 Units US
    1⁄2 cup butter or 1⁄2 cup margarine, melted
    1 tablespoon Worcestershire sauce
    1 teaspoon ground mustard
    1⁄2 teaspoon garlic salt or 1⁄2 teaspoon garlic powder
    1⁄4 teaspoon pepper
    4 boneless skinless chicken breast halves
    1 (6 ounce) cancheddar French-fried onions or 1 (6 ounce) canoriginal French-fried onions, crushed
Directions
    In a shallow bowl, combine the butter, Worcestershire sauce, mustard, garlic salt and pepper.
    Dip chicken in the butter mixture, then coat with onions.
    Place in a greased 9-inch square baking pan.
    Top with any remaining onions; drizzle with any remaining butter mixture.
    Bake uncovered at 350 degrees for 30-35 minutes or until chicken juices run clear.

    1 (1/4 ounce) envelope Lipton Onion Soup Mix
    1 cup fine dry breadcrumb
    1 (2 1/2-3 1/2 lb) broiler-fryer chickens, cut in parts
    2 cups mayonnaise
Directions
    Place Onion Soup Mix and bread crumbs in large plastic food bag and
    shake to blend. Brush chicken on all sides with Mayonnaise. Place one
    piece of chicken in bag at a time. Close tightly and shake till coated.
    Place chicken on rack in broiler pan. Bake in 400 degree oven 40 to 45
    minutes or until golden brown and tender.

We recently had spring break for the kiddos.  We decided to take a trip down to Moab.  I have lived in Utah my entire life and never been there.  And I have been missing out!  We rented a jeep to take down there for Jeep Weekend.  Now, I am getting pretty big and pregnant.  I am nearing the end!  We tried to keep the trails easy for me.  But the hubby would always underestimate the length of things just so I would go!  The hike was a whole lot longer than 1/4 mile, and the trails that we took were a little bumpy.  It may have caused a few contractions and my feet may have tripled in size.  But all in all we had a blast!  A fun little getaway right before the babe gets here.

I love meals that I make that immediately go into my top 10 favorites of all time.  This was one of those meals.  It was SO easy to put together.  And the flavor was absolutely fantastic.  It was perfectly tender and moist and the french fried onions gave it a delicious crunch on the outside.  And did I mention how fantastic the flavor was?   Oh yes I did.  We couldn’t get enough of it and the family was raving how amazing it was!  You are going to love this one too!

Crispy Baked Onion Chicken

 An easy and delicious chicken that is baked with crispy onions and has a fantastic flavor!
Ingredients
    4 boneless skinless chicken breasts
    ½ cup butter, melted
    1 Tablespoon Worcestershire sauce
    1 teaspoon ground mustard
    ½ teaspoon garlic salt
    ¼ teaspoon pepper
    1 (6 ounce) can cheddar, or original french fried onions, crushed

Instructions
    Preheat oven to 350 degrees. Grease a 9 inch square pan and set aside. In a shallow bowl combine, melted butter, Worcestershire sauce, ground mustard, garlic salt, and pepper.
    Place ½ cup crushed fried onions in another shallow bowl. Dredge each chicken breast in the butter mixture and then coat with the onions. Place each chicken breast in the 9 inch pan.
    Sprinkle remaining crushed onions on the top and drizzle the remaining butter sauce on the top of chicken. Bake for about 30 minutes until no longer pink and cooked throughout.

French's® Crunchy Onion Chicken

Start to Finish: 25 minutes
Makes: 4 servings
    INGREDIENTS
2 cups (4 oz.) French's® Original or
   Cheddar French Fried Onions
2 tablespoons Family Gourmet All-Purpose Flour
    4 (5 oz.) Boneless Skinless Chicken Breasts®
1 Egg, beaten
     DIRECTIONS
1. Place french fried onions and flour into a plastic bag. Lightly crush with your hands or a rolling pin. Transfer to a pie plate or waxed paper.
2. Dip chicken into egg; then coat with onion crumbs, pressing firmly to adhere. Place chicken on baking sheet.
3. Bake at 400°F for 20 minutes or until no longer pink in center.

Easy Butter Chicken Recipe – Murgh Makhani

Butter Chicken is definitely the most known and popular North Indian dish in the world. Most probably you will have come across this dish abroad and if you are in India then of course you couldn’t have missed it. I personally don’t remember when I tasted my first Butter Chicken dish but one thing is sure, it must have been in this marvelous big colorful country called India.

There are countless versions of this dish and I think so it must be the most modified Indian dish ever and everybody of course claims theirs is the best – just like the middle eastern shakshuka. Some folks prefer the butter chicken with the bones, some claim that it is not a butter chicken if certain ingredients are not included. Honestly I do not know the real version and I am not going to tell you either that my easy butter chicken is the best. But I am standing behind my recipe and I assure you I can eat it every single day in my life and so does my Indian husband.

I remember how our tandoori chef would cook butter chicken occasionally. You see, butter chicken is a typical north Indian dish and so is the Chicken Tandoori and Tikka from Punjab. I am not going to go into the details of the butter chicken history since it seems to be rather blurred (and even the Wikipedia entry has changed in the past year, which is suspicious).

Anyway, so our chef would prepare, cook and serve his fabulous and famous chicken tandoori and if some was left, he would not resell it the next day, no, he would turn it into a gorgeous butter chicken lunch for us all.
The cool part in reusing tandoori chicken and turning it into a delicious butter chicken dish is…
1. left overs are turned into something even better
2. Time management – you don’t have to marinate the chicken again
and finally…
3. anything cooked previously in the Indian Tandoori oven develops a crunchy outside and perfectly cooked inside.
Because I had gained this knowledge in the past years I was reluctant to cook a butter chicken without using tandoori baked chicken. The way our chef would prepare his food was beyond perfection, although he was a humble cook, and he was the controller of the mighty tandoori oven, so I, the white western girl, couldn’t possibly recreate something so majestic in the foodie world or so I thought…

After the tandoori dream crumbled and I was officially a big time tandoori fan I was stumped. I was missing the fresh nans and tandoori dishes and guess what, one fine day I simply started to prepare them at home. You can imagine that I had a couple of faux pas but all those mistakes helped me in understanding the mughlai, North Indian cuisine. Finally I have come to a point where I can say that this easy butter chicken recipe is all I will ever need because I tried different approaches but I enjoyed the flavors in this self developed recipe the most.

Not many people own a tandoori oven in their back yards, so an easy butter chicken recipe was required. I have taken the trouble to make this dish perfect because it doesn’t deserve anything less, so that you can get to enjoy it in your own four walls with the simplest means.  I invite you to try this easy butter chicken recipe, a classic flavorful and comforting Indian dish.
Ingredients
    20 Almonds
    400 grams Chicken
    2 Teaspoon Ginger Garlic Paste
    60 milliliter Yogurt
    1½ Teaspoon Garam Masala
    1 Teaspoon Chili Powder (or less if you don't want it too hot)
    ½ Teaspoon Turmeric Powder
    ½ Teaspoon Chaat Masala
    ½ Teaspoon Kitchen King Masala
    pinch or 3-4 drops red/orange Food Coloring (optional)
    Salt according to your taste
    Pepper according to your taste
    3 Tablespoon Tomato Paste
    ½ Lime
    4 Tablespoon Butter
    ½ Tablespoon Olive Oil
    1 medium Onion sliced
    1 small bay leaf
    1½ Tablespoon fresh chopped Coriander (cilantro) (half for the cooking, half to garnish)
    2 Tablespoon fresh Cream

Instructions
    First toast your almonds in a dry pan by shaking the pan frequently so that they don't burn. We need to do that so that we can blitz the almonds in the blender into fine almond flour. Keep the almond flour at the side for later. Easy Butter Chicken Recipe - Murgh Makhani www.masalaherb.com

    Add to the bowl all at once the ginger garlic paste, yogurt, garam masala, chili powder, turmeric powder, chaat masala, kitchen king masala, food coloring, salt, pepper, the tomato paste, ½ lime and the previously ground almond flour. Mix the whole content well and keep aside to marinate for 20 minutes (the longer the better).     Let it cook for 1-2 more minutes. Take from the heat, garnish with the remaining chopped coriander and serve with Indian flat breads such as nan, chapati, roti.

It’s been a good 3 months since I’ve last posted, I had to leave the goodness in Andrea’s capable hands for a time. But I’m back, I’m alive, I’m here! Three months… hmmm…. why would I avoid food-blogging for that specific amount of time? Oui, Oui, the obvious, I’m “with child” yet again! A majority of the women that exist in the world who’ve done it I’m sure can agree on one thing: food is the enemy for a minimum of 3 months. The kitchen is the enemy. Anything with flavor or smell within a 10 mile radius is the enemy.

The food you see above I refused to touch with a ten foot pole. Had I posted something before now it might be titled “Look How Much I Love Grazing on these Cardboard Crackers.” Unfortunately my family insists on eating every single day, THREE times a day no less, so I was forced into the kitchen to make food stuffs. I doubt it tasted any good because I wasn’t testing it along the way myself…

This was my survival method. Not a joke. Ninja style. It’s very uncomfortable and difficult to breath as a grossed-out ninja. It goes without saying there were many buttered toast and sliced fruit dinners for the fam-damly.

Then about a week ago I got interesting in doing the whole chef thing again. Finally! I’d been resurrected. Pregnancy is so weird and irritating. Any-hoo, I started off cautiously by following a few saved recipes from some of my favorite fellow food-bloggers just to make sure I still knew how to chop, fry, and mix ingredients together. First was a veggie filled white bean casserole  from my number one blog crush, An Edible Mosaic. If humans could marry blogs, I might go for this one. (This was easy to make GF, simple replacement)

The second attempt at dinner was also a success, and the idea came from a new found blog I’ve been very much enjoying called Urban Baker. These Mini Gluten Free Corn Dogs were FUN to make and a huge hit with the family–particularly with Phil. They were surprisingly easy &  satisfying. As she recommended,  I froze the left-overs and used them in Teya’s school lunch later that week. I really like smart people….. Thank you smart people, you make us all very happy. (I was also able to make this sans gluten and without eggs, using EnerG Egg replacement)

Now back to that intro pic. Comfortably back in the saddle, Phil and I worked in tandem tonight to come up with a chicken wrap that mimics one of our favorite places, PF Changs. We’ve made these several times before, but they’ve always tasted a tad too Ammrrrcn. With the use of some new ingredients true to traditional Japanese cuisine and flavors, and cutting out items they’d never use like peanut butter, this time we hit it on the money. They’re very light and healthy when made true to form. Using just one chicken breast instead of two and then throwing in a heaping pile of  sugar snap peas in place also improved upon the weight of this meal.

Chicken Lettuce Wraps, PF Chang Style, Gluten Free

You know those white crispy rice noodles called Maifun rice sticks? Don’t skip on those! Not only do they add the necessary dry crisp, they’re a total blast to fry. It’s like a magic trick in your kitchen; a surprising confusing magical trick to make the burliest of manly men giggle. I witness it. Really, they’re in the Asian section of any store (bottom shelf usually) and only a couple bucks. Invest in the fun. When you fry them, make sure the oil is blazing hot (400 degrees) or no magic happens. Test one little noodle at a time: if it sinks its not ready, if it explodes in the blink of an eye it’s ready.

This meal is extremely simple to prepare. It looks like a long list of ingredients, but that’s mostly sauces and spices which mix up in a jiffy. Yes, jiffy is still a cool word to use. The 90′s are making a comeback, don’t ya know. When it comes down to it this meal took no more than 30 mins from beginning to end. Bon appétit…  or in true Japanese fashion, douzo meshiagare!

Chicken Lettuce Wraps, PF Chang Style, Gluten Free

Light Chicken Lettuce Wraps — PF Chang Style

Ingredients
    For the Stir-Fry:
    3 tablespoons Bragg Liquid Aminos or soy sauce*
    1 tablespoon water
    2 tablespoons mirin**
    1 tablespoon sesame oil
    2 teaspoons rice vinegar
    about 3 tablespoons coconut oil- used in separate intervals
    1 chicken breast
    one 8-ounce can water chestnuts, drained and minced
    sugar snap peas
    1 cup mushrooms, diced
    1 teaspoon garlic, minced
    1 teaspoon ginger paste (or freshly grated, ½tsp if using powder)
    3 tablespoons green onion, chopped
    ½ bag of maifun rice sticks, fried**
    large leaf lettuce for the cups, either iceberg, butter, etc.
    For the Dipping Sauce:
    2 tablespoons agave (regular sugar can be used)
    ½ cup water
    3 tablespoons Braggs Liquid Amino or soy sauce
    1 tablespoon rice vinegar
    2 tablespoons green onions, chopped
    a smidgen of spicy mustard
    a small splash of mirin sauce
    1 – 3 teaspoons siracha chili sauce, depending on your level of heat pref.

Instructions
    Begin with the chicken breast. In your saute pan/wok, fry it up on med-high in a couple tablespoons of coconut oil, 4 to 5 minutes each side until it’s nearly finished. When it’s done, set on a plate to rest and cool as you work on frying the veggies.
    While the chicken is cooling, prep the stir-fry sauce by whisking all the ingredients together in a bowl (this doesn’t include the coconut oil).
    Dice the water chestnuts, snap peas, and mushrooms. When the chicken is cool enough to touch, dice it as well (very small bits). Now add another tablespoon of coconut oil to the saute pan/wok over high heat. When the oil is hot, add the chicken, water chestnuts, peas, mushrooms, and garlic to the pan. Cook the mixture for 2 minutes, stirring often.
    Add the stir-fry sauce to the pan and saute for a couple more minutes, then stir in the green onions at the very end before removing from the heat.
    Fry the maifun sticks according to instructions on bag — usually in just a couple inches of oil (we use coconut here) on super high, 400 degrees, for a few seconds. Flip once so the other side of the noodles can explode. Let cool on a paper-towel or rag. TIP- the sticks are crazy stiff before fried, use kitchen scissors to cut them in half before frying. You’ll only need to use half the bag, save the other half for next time.
    Whisk together the ingredients for the dipping sauce in a serving bowl.
    Serve the chicken with a side of lettuce cups and the sauce drizzled on top with loads of crunchy maifun sticks.
    *If you’re unfamiliar with Braggs Liquid Aminos, it’s a gluten free soy sauce replacement, tastes practically the same.
    **Mirin is also easy to find in the Asian isle and only a couple $ per bottle. It’s sweet, and slightly alcoholic, so use lightly in dishes, but it’s quite necessary when going for a balanced authentic Japanese flavor. It’s also always used in teriyaki sauce, so there’s another good use for it once you’ve bought it.
