Crispy Chicken Sandwich Biography

Wendy was a late comer to the value-priced chicken sandwich arena; I think Carl's Jr, Jack in the Box, Burger King, and McDonald's all had it in some form or another before them.  It's funny because Wendy's Super Value Menu is the first $1 value menu I remember.
The generically but descriptively named Crispy Chicken Sandwich features a fairly sizable breaded chicken patty made of mechanically separated white meat, one leaf of iceburge lettuce, and a bit of  mayo for 99 cents.
I thought Wendy's Crispy Chicken Sandwich was pretty good.  As I've mentioned before, I like the little bit of sweetness to the Wendy's bun and the patty was very crispy.  Also, the patty is noticeably bigger than the McChicken which is nice.  Plus, Wendy's is within walking distance of my house.
To provide a counterpoint, the sister-in-law does not like the Wendy's egg bun; she thinks it too thick and dense and prefers the McChicken the best out of all value-priced chicken sandwiches.
In the end though, honestly, I would just go with whatever was closest; while there's some slight variations between each brand's chicken sandwich, they're still by and large the same thing or at least close enough for me
Wendy's Monterey Ranch Crispy Chicken Sandwich features a white meat crispy chicken patty topped with all-natural Monterey Jack cheese, lettuce, and ranch sauce, served atop a hamburger bun for the value price of 99 cents.
The chicken patty is, like all value-priced chicken sandwiches, of the mechanically separated variety and comes nice and crisp and lightly seasoned. I'm sad they replaced their yellow buns with the typical fast food white ones.
Most of the flavor is provided by a rather strong ranch sauce, a little too strong as it washes out the lighter seasoning of the chicken and cheese.
Monterey Jack being a rather bland cheese added a bit of melted cheese texture as well as some creaminess.
It's not a bad buy if you're a fan of ranch or are looking for a good value but I'd rather go with the regular Crispy Chicken Sandwich at Wendy's.
A recipe for 2; easily doubles. Panko crispy fish or chicken with a wonderful spicy mayo. Looks like a lot of ingredients, but can be thrown together quickly. See "Note" at bottom of directions for the chicken version.
Ingredients
Nutrition
Servings 2 Units US

    vegetable oil (for frying)
1⁄2-3⁄4 lb fresh tilapia fillets, flounder, perch, any other firm fish or 1⁄2-3⁄4 lb boneless chicken breast, chicken note below
3⁄4 tablespoon cajun seasoning, plus additional for sprinkling
    3⁄4 cup all-purpose flour
    3⁄4 cup panko breadcrumbs
    1 egg
    1 tablespoon Dijon mustard
    1 1⁄2 tablespoons water
2 mini baguette, lightly toasted (or sandwich-sized pistolettes, Hoagie rolls or buns)
    4 slices tomatoes
    4 green lettuce leaves
    4 thin slices red onions
    Spicy Mayonnaise
    2 tablespoons mayonnaise
    1 tablespoon lemon juice
    1 -1 1⁄2 tablespoon frank's hot sauce or 1 -1 1⁄2 tablespoon sriracha hot chili sauce
    1⁄2 teaspoon rice vinegar

Directions
Spicy Mayonnaise: In a small bowl combine mayonnaise, lemon juice, hot sauce, and rice vinegar until blended. Set aside.
    Preheat oil in saute pan.
Wash fillets and pat dry with a towel. Lightly sprinkle with Cajun seasoning on both sides.
In one bowl, place flour mixed with 1 1/2 tablespoons Cajun seasoning. In a separate bowl place the panko and in a third bowl, beat together the egg, Dijon mustard and 1 1/2 tbs. water.
Dredge fillets into flour, then the egg mixture and lastly, the panko. Add fish or chicken to oil and fry until golden brown, about 5-6 minutes depending on thickness. Remove to a paper towel lined platter.
To assemble, spread the Spicy Mayonnaise mixture on both inner sides of the toasted pistolettes then layer within the hot fish (or chicken) fillets, romaine, tomatoes and onion slices.
NOTE: For the chicken version, with a mallet pound skinless, boneless breast fillets to a 1/8" thickness then proceed with recipe instructions.
